Refreshingly Fruity Homemade Ice Lollies

In celebration of International Day of the Girl Child, we have pulled together some ‘so easy a child could follow them’ recipes for more nutritious versions of childhood favourites, for the responsible adult in you.

Embrace your inner child and take yourself back to the days when your only worry was what you were going to find in your lunchbox that day.

Yoghurt is abundant in calcium, which promotes strong bones and teeth. It contains good bacteria (contributes to healthy gut function) and protein which will keep you feeling full. Choose a Greek style with active live probiotic cultures for the maximum benefit.

Fruit is full of fibre, vitamins and nutrients which promote vitality. Choose berries for an antioxidant hit, citrus to boost vitamin C or bananas for a body fluid balancing potassium shot.

Honey is a rich natural source of antioxidants which has been used as a key ingredient in homeopathic concoctions for thousands of years. It has antibacterial properties and can help to regulate blood sugar levels.

What you will need (for 6 servings)

450g pot of natural yoghurt (preferably with probiotic cultures)

150g of a soft fresh fruit (e.g. raspberries, kiwi, mango)

One tablespoon of honey (preferably organic manuka honey)

An ice lolly mould

Process

Step 1 Mash the fruit until it is at a thick puree consistency.

Step 2 Stir in the yoghurt and honey.

Step 3 Add to the lolly moulds and freeze overnight.

Step 4 Devour the delicious ice lolly so quickly that it gives you brain freeze.

Tip. For a nutritional boost which elicits memories of those legendary Fab ice lollies, dip the tip of the lolly in dessicated coconut ahead of serving.
